Janet’s Christmas yule log

Another delicious recipe from our baking sensation, Janet Pyle.

Our very own baking sensation (Janet) has been busy in the kitchen yet again, and this time she has a delicious festive treat for you all to try.  

The traditional Christmas yule log has been a staple dessert for many a family across the generations and a firm favourite for both old and young. But this year, instead of buying one from the supermarket, why not try making one!?  

All ‘yule’ need is….  

. 2 oz plain flour 
. I oz cocoa 
. 3 eggs 
. 3 oz caster sugar 
. Chocolate of your choice 
. Fresh cream (or butter cream) 
. Raspberry or strawberry jam 
. Christmas decorations 

 

Instructions:  

. Preheat the oven (fan oven -180, gas oven – mark 6, conventional – 200) 
. Layer a flat rectangular baking tin with greaseproof paper 
. Whisk eggs and sugar together until light and fluffy 
. Using a large metal spoon fold in sifted flour and cocoa 
. Mix gently until evenly mixed – level with knife 
. Bake for 8 to 10 mins until well risen and firm to touch 
. While still warm, place on baking paper and sprinkle with caster or icing sugar 
. Place another piece of baking paper on top of cake and gently roll into a log shape 
. Unroll when cool and spread with jam and cream 
. Roll into log shape again 
. Melt chocolate with a little nob of butter and cover log 
. Decorate with your Christmas decorations
